Remember that easy recipe for making your own refrigerator pickles? Turns out, you can simply replace the cucumbers with sliced radishes and have another type of tasty pickle in your fridge!
This time, I boiled a 1:1 mixture of water and vinegar and stirred in an 1/8 cup of sugar to make my radish pickles a little sweet.
You can also follow this simple recipe to make your own Marinated Radish Salad that serves 6-8 people. You can also find this recipe in one of my favorite cookbooks, Simply in Season.
8 large bunches radishes (sliced, diced or julienned)
8 green onions
1/4 cup fresh dill (chopped; or 1 TBS dill seed)
Stir together the following and pour over above radish mixture:
1/2 cup olive oil
1/4 cup lemon juice
1 tsp. sugar
1 tsp. dijon mustard
1/2 tsp. salt
pepper to taste
Toss lightly, cover and refrigerate at least 2 hours but no longer than 4 hours.
Remove 30 minutes before serving. Stir.
Just before serving, sprinkle over the top:
6 oz. shredded Swiss cheese
