I love beets. Really, I do. I think they are entirely underappreciated. How can you not like something that stains your cutting board and hands and teeth such a beautiful shade of deep fuchsia?
In an effort to encourage everyone else in the world to admire the glorious beet as much as I do, I post the following recipe, taken from bon appetit. Combining beets, yogurt, and lots of the delicious herbs in the garden, this savory dip should persuade even the pickiest of beet haters (because even if you don’t like beets, you’ve got to agree that just about anything tastes good on top of some nice, soft pita).
